    Fansi Dhokli is Gujarati Pasta in French Beans curry, a shaak we love to eat on its own or with phulka rotli. Dhokli is often referred as dumplings but I like to call them Gujarati pasta. The mention of the word  Dhokli and the first dish that pops up in mind is Dal-Dhokli, a dish synonymous with Dhokli. But people who are much informed about the  Gujarati cuisine will know that the Gujaratis add Dhokli to  number of  foods. Traditionally, Dhokli is added to vegetables, pulses and lentils. When added to pulses and lentils it turns into a filling one-pot meal whereas we prefer to add dhokli to the vegetables so that it adds up to the quantity or adding potato is not intended. However, the size and shape of the Dhokli will change when added to the veggies.  Fansi-Dhokli is a very popular subzi/curry we like to prepare when tender French beans are in season. The dhokli here  are small marble sized balls pressed with a thumb to shape up as small discs with a slight indent. The recipe is minimally adapted from a Tarla Dalal recipe.

    Winter or monsoon .... whatever may be weather, we always crave for some yummy, hot and spicy street food. And if that is purely homemade, then what a bliss !! Basically aloo tikkis are some mashed potato combined with some binding agent and spices and finally shallow or deep fried in a tikki / patty shape. Since these days fresh green peas are plentily available in market, so I thought of making some mashed peas stuffed into the regular aloo tikkis. If green peas are not available then just boil some normal peas, roughly mash and use. Binding agent used here is cornflour. Breadcrumbs or soaked poha can be used as binding agent. Some rice flour also I have added to absorb moisture in potato if there. The roughly mashed peas first saute with some spices and then stuff. These stuffed patties can be shallow fried or deep fried until crispy and golden brown on both sides. If you are health conscious, then just go for shallow fry. These are easy to prepare and used a few ingredients and the result is bursting with flavors. Kids'll love these flavorful patties as well as adults. An awesome snacks, these can be served as along with any preferable dip like green chutney, tamarind chutney etc.

    A Bengali delicacy, lau er kofta is bottle guard dumplings in a spicy gravy. I have baked the koftas instead of deep frying them. I choose to bake or grill over frying in my day to day cooking because they are healthy and best alternative without comprising much on the taste of the dish. Bottle gourd is one of best summer vegetable that we have and it is a must to include them in your diet. There are so many ways we can make this otherwise bland vegetable into an absolute delight! This is one such recipe.

    Pulao is an Indian rice pilaf consisting of rice and a mixture of either lentils or vegetables, mainly including peas, potatoes, french beans, carrots or meat, mainly chicken, fish, lamb or prawn. It is usually served on special occasions and weddings, though it is not uncommon to eat it for a regular lunch or dinner meal. It is considered as very high in food energy and fat. A pulao is often complimented with either spiced yogurt or raita. Usually basmati rice is used to make pulao. Any pulao without onion garlic is a pure vegetarian recipe famously eaten during festivities or fasting days in India. This peas pulao is made without adding onion or garlic, so this is essentially a healthy and sattvik version of food. Since there is no chopping of any veggies or no addition of any meat, hence this is made so quickly. Because of use of only peas, this pulao has some sweet taste as compared to other pulao. The spices like cinnamon, cardamom, cloves, star anise add the perfect flavor to the dish.
