Cover the pan while cooking first side. And spread when heated well( griddle). And i guess no Eno used.
If It's Besan then what I used to make chilla Besan, tomato pulp ,garlic paste,water, carom seeds powder and salt, I think because of Curd this happend..you have to add some water in it...like 2cup besan 1/2cup curd and rest water.. And always to avoid Stick on pan.. USE a half slice onion dip into oil then rub over pan..ur Chilla or dosa never Stick HOPE this will Help you dear.

I hope you heated the tava well. If tava is not really hot, it will stick to it. Also, the consistency has to be just right. If it is thin, again it will stick.
