हैदराबादी मुर्ग दम बिरयानी रेसिपी

हैदराबादी मुर्ग दम बिरयानी बनाने की सामग्री ( Hyderabadi Murgh Dum Biryani Banane Ki Samagri Hindi Me )

  • हड्डी के साथ 1किलो चिकन
  • 1 किलो बासमती बिरयानी चावल
  • 1/2 किलो स्लाइस किया प्याज; डीप फ्राय करना
  • 1 तेज पत्ता
  • 1 दालचीनी
  • 1 टी स्पून जीरा
  • स्लाईस किये हुए 4 प्याज
  • 1/2 कप कटा हुआ पुदीना
  • 1/2 कप कटी हुई धनिया पत्ती
  • थोडा सा केसर
  • 1/2 कप गरम दूध
  • रोज वाॅटर की कुछ बुंदे
  • 2-3 लौंग
  • 2-3 हरी इलायची
  • मैरीनेट के लिए 1/2 किलो योगर्ट
  • 1 टी स्पून नमक
  • 3/4 कप लाल मिर्च पाउडर
  • 1 टी देगी मिर्च / काश्मिरी लाल मिर्च पाउडर
  • 1 टी स्पून हल्दी पाउडर
  • 1 टी स्पून गरम मसाला
  • 1 टी स्पून चिकन मसाला
  • 1/2 टी स्पून कसा हुआ जायफल
  • 1/2 टी स्पून जायत्री का पाउडर
  • 1 टी स्पून लहसुन पेस्ट
  • 1 बारीक कटी हुई हरी मिर्च
  • 1 टी स्पून दालचीनी पाउडर

हैदराबादी मुर्ग दम बिरयानी बनाने की विधि ( Hyderabadi Murgh Dum Biryani Banane Ki Vidhi Hindi Me )

  1. 1: Soak rice in water for half an hour.
  2. 2: Clean and wash Chicken pieces.
  3. 3: Marinate chicken pieces in yogurt and spices mentioned under marination for atleast 2 hours.
  4. 4. Deep fry onion slices.
  5. 5: Soak saffron in warm milk and keep it aside.
  6. 6: Heat oil in a thick bottomed vessel.
  7. 7 : Add 1 Bay leaf , 1 cinnamon stick 1 tsp Jeera/cumin seeds
  8. 8: When it crackles, add onion slices and cook them till they are golden brown in color.
  9. 9:Now add chicken pieces and saute till half cooked.
  10. 10. Boil rice in salted water along with cinnamon stick, cloves and cardamom.
  11. 11.Remove from flame and strain when they are 3/4 done. Fluff them a little.
  12. 12: In a thick bottomed vessel, spread a layer of chicken with its gravy, then a layer of rice.Sprinkle rose water, saffron milk, 1 / 2 of fried onions, Mint and coriander.
  13. 13: Again repeat with rest of the rice and chicken.
  14. 14: Cover it tightly with the lid and seal it with wheat dough.
  15. 15: Place it on hot tawa/griddle and cook on slow flame/dum for 15 minutes.
  16. 16: Let it be there for 10 minutes and then remove the lid.
  17. 17: Serve with gravy and onion rings.
