You can make a tomato based gravy or curd based or nuts and cream based paneer gravy .All these variations will give different tastes.
You can try Punjabi paneer butter masala, kadai paneer, paneer butter masala, paneer tikka masala. You can add more chillies, fresh cream, curd for different variations.
Cut onions and saute them till they are brown......and put dahi instead of tomatoes....when the onions are brown...put lil water to make them soft ..then put all the masalas and put dahi and cook on slow....when u brown the onions the sweetness goes away....try this
Soak cashewnuts cloves cinamon javipathri(this ha special strong flavour).dry methi leavesshould be topped finally on top of the butter.black currants some tomatoes and a peice of carrot.grind all coarsely .add ghee and oil to fry this .chilly powder and haldi can can be added when cooking..as usual add ginger and green chilly..when oil starts floating add the psneer cubes.sprinkle corriander and methi leaves.
Try preparing kadai paneer. Its little spicy... And you will love it.

U may be right jassu. Next time i would definitely limit the onions in gravy :)

Best gravy fr tang in paneer is no onion . Tomato gravy with corriander garlic paste ginger optional nd spice up with green chilli paste
