Hi Malu... Active dry yeast needs to be dissolved in water before using while instant yeast can be mixed right into the dough. I have baked breads but trust me instant yeast yields better breads etc. You have to be very careful when activating yeast, I have killed my yeast several times. When dissolving it in water, it should be Luke warm... add sugar as it helps the yeast. Instant dry yeast is readily available compared to instant yeast but it is worth the effort. Hope this helps!

Active dry yeast is more granular and instant yeast is very fine powder. Major diff is you need to activate the dry yeast by dissolving it in Luke warm water. Instant yeast you can add directly and does not require to be proofed. Both have similar results. Use the one you are comfortable with or as the recipe requirement.
