Hi I make tomato rice and curd rice. Finely chopped onion, two tomatoes, some ginger garlic and green chillies. In a kadai add oil heat add seasoning of mustard seeds, urad dal, channa dal, red chilli, and curry leaves. Saute and add onion fry until golden pink add the tomatoes, fry add the ginger garlic and green chillies fry until well cooked, add salt to your taste, turmeric powder, Dania powder, chilli powder, and a pinch of garam masala cook well to this add mint n coriander leaves. When done add the cooked rice and mix well. Let it stay for some time on low flame covered. Garnish with fresh coriander leaves and serve hot with onion raitha.

If the lrftover rice is not too sticky, I usually stir fry it with s few vegetables. Take the leftover rice in a big bowl, add a few drops of oil, pinch of salt, some chilli pd, Maggi cube, crushed. You may add one cube for one big bowl of rice. Mix well by hand & keep aside. Heat a little oil in a kadai & stir fry some sliced onions, finely chopped garlic, chopped mushrooms & capsicums. In fact, any leftover veggies that can be quickly stir fried may be added. Once the rawness of the veggies is gone, add the prepared rice & stir everything for a minute or two. Maggi Rice is ready. Serve hot.

Hi left over rice can be used to make chicken and rice balls. I just experimented it recently . If vegetarian then cheese olive rice balls. Just take rice ,mix grated cheese ,and chopped chicken or olives or both and make balls .coat with bread crumbs and bake or fry. They taste yum.
