Ingredients to make Kesari Phirni

  • Rice - 80 grams (a little less than 1/2 cup)
  • Milk - 1 litre full cream
  • Milk pwd - 3 tbsp
  • Saffron(kesar) - 20 to 25 pieces
  • Pistachios(pista) - 10 to 12 (finely chopped)
  • Cashew nuts - 10 to 12 (cut into small pieces)
  • Sugar - 75 grams (1/3 cup)
  • Cardamom pwd -1/2 tsp
  • Kewra essence - 2-3 drops

How to make Kesari Phirni

  1. Clean rice, wash and soak in water for 30 minutes. Remove water from rice and grind it to a lightly thick paste.
  2. Heat milk in a heavy based utensil. After the milk comes to boil put the rice paste in it and cook till this mixture comes to boil again(stir continuously). Add milk pwd and mix well.
  3. On a low flame till cook till Phirni becomes thick and rice gets cooked. Stir Phirni every 2 minutes.
  4. Put sugar, cashew nut pieces and saffron in some milk and mix. Cook Phirni till sugar dissolves. Phirni is ready. Turn off the gas. Add elaichi powder, kewra essence and mix well.
  5. Take out Phirni in a bowl and garnish with chopped pistachios or pour Phirni in small bowls and garnish with chopped pistachios. Keep these bowls filled with Phirni in the fridge to cool. Serve chilled and delicious Kesari Phirni for dessert after dinner
