ABOUT Egg Kejriwal Cups RECIPE

This dish has nothing to do with our honorable Delhi's CM Mr. Arvind Kejriwal..... This popular eggs breakfast recipe finds its origin in one of the premier Golf Clubs in Mumbai and has been named after their esteemed member Mr. Deviprasad Kejriwal (way back in 1960s). Eggs Kejriwal is today a popular delicacy globally and tops the food item list in New York. Though the authentic recipe calls for a simple bread slice topped with cheese and half fried egg, I have tried to give it a twist by presenting it in the form of cups. Hope you like my version of the same.

Ingredients Serving: 6

  1. Egg - 6
  2. Bread slice - 6
  3. Mushrooms (chopped) - 1 tbsp
  4. Onions (chopped) - 1 tbsp
  5. Green chilis (chopped) - 2 to 3 tsp
  6. Grated cheese - 2 to 3 tbsp
  7. Salt - as per taste
  8. Black pepper powder - as per taste
  9. Oil - 1 tbsp

Instructions

  1. Preheat the oven at 180 degrees centigrade.
  2. Roll out the slices of bread thinly using a rolling pin.
  3. Line a muffin tray cavities with the rolled out bread slices.
  4. Brush the breads cups with some oil and pop in the oven for 10 minutes or until they turns crisp.
  5. Meanwhile, heat the oil in a pan; saute onions, green chilis and mushrooms. Season them with some salt and black pepper powder. (You could use any vegetables of your choice)
  6. Once the bread cups are crisp, take the muffin tray out of the oven and fill each cup with about 2 tsp of onion mixture. Top it with some cheese and again pop in the oven for about 2 minutes or until the cheese starts melting.
  7. Again take it out from the oven; use a spoon to push down the cheese and onion mixture in the cup so that there is some space created to place the egg yolk. Crack open the eggs and gently place one yolk in the middle of each cup.
  8. Again pop it in the oven for about 7-8 minutes or until yolk is partially cooked (It has to be slightly runny as in half fried egg).
  9. Finally take out the muffin tray, gently dish the cups out from the cavities. Sprinkle with salt and pepper and serve hot !
