Ingredients Serving: 4

  1. 1 watermelon cut into pieces and deseeded
  2. 1/2 cup olives sliced
  3. 100 grams feta cheese cubed
  4. a handful of mint leaves
  5. 1 tsp balsamic vinegar to drizzle
  6. 2 tsp extra virgin olive oil to drizzle
  7. pepper to taste

Instructions

  1. In a bowl mix together the watermelon, olives and feta.
  2. Tear the mint leaves over it and set it to chill until you are ready to serve
  3. Drizzle balsamic and olive oil just when you are ready to serve. Top with cracked pepper
  4. Serve chilled

"Summer in my plate" .....this is what I would call this colourful salad with juicy watermelon, olives and feta cheese. We had this salad long ago in a cafe in Pondicherry and loved it. Thank you for sharing Bindiya. I will definitely try it.
