ABOUT Rava Pongal RECIPE

Rava pongal .....Now a days it has become a popular breakfast in Andhra and is widely available in almost all the vegetarian restaurants and even on the road side food stalls...    All Pongal recipes are traditionally prepared with rice , However Rava Pongal is a delicious and Healthy alternative to rice. The Rava and Moongdal used in this preparation are both nutritious and filling....      So what could be better than having this for Breakfast to keep u going until lunch...     As they say Eat Breakfast as king , Lunch as a Queen and dinner as a beggar...so i feel this fits into that zone very well...

Ingredients Serving: 4

  1. 1/2 cup split yellow Moong dal
  2. 1 cup semolina / upma rava / sooji / cream of wheat
  3. 3 cups water
  4. 2 tbsp ghee
  5. 2 tbsp Oil
  6. 1/8 tsp mustard seeds
  7. 1/8 tsp cumin seeds
  8. 1/4 tsp  black pepper corns
  9. 1/8 tsp Turmeric 
  10. 3 to 4 green chillies slit
  11. Salt to taste
  12. 1/2 tsp crushed / grated ginger
  13. A sprig of mint leaves chopped
  14. 2 Tbsp roasted cashews chopped..( if using raw / fresh cashews fry in ghee n set aside )

Instructions

  1. Prep work :      Wash and cook the dal in a pressure cooker until soft and mushy. Dry roast the rava / semolina on a  low to medium heat until a subtle aroma is felt (Please fry on a low heat as we do not want any change in  its color).
  2. Heat a kadai / pan. Add the oil , once warm add the mustard , cumin , peppercorns, curry leaves ( optional ) Once the mustard n cumin splutter add in the green chillies , chopped mint and ginger.
  3. Fry for a min and add the turmeric stir fry for a min. Add the roasted cashews.Now goes in the dal paste and add water.
  4. Stir well and break the lumps if any. Cover this with a lid and bring to a boil. Once it starts boiling remove the lid, over the heat and add enough salt, now stir well.
  5. Later add the roasted rava slowly,  stirring continously. (Be careful as it forms lumps very quick so stirring is a must...seek for help if u cannot  manage...) Once you add the rava keep cooking and stirring on a low heat. After a couple of mins it will thicken and absorb almost all the water.
  6. Now switch off the heat, add left over ghee. N keep covered for a min. After a min stir well and its all ready to be served.. You can serve it with Coconut chutney or Raita.
