ABOUT Tofu Pon de Ring Donut RECIPE

Back in early 2000's while we were the inhabitants of Japan, Mister Donut was one of our favorite eateries, a popular Japanese donut chain.They sell traditional yeast donuts and old fashioned donuts, what they are most known for are their Pon de ring. It’s meant to be shaped like a lion’s mane to represent their adorable lion mascot. In addition to the unique shape which is fun to eat by tearing off the balls piece by piece, the texture is also different. Pon de rings are like a hybrid of mochi and donuts. They have both a chewy and bready texture. The donuts come in various flavors and are topped with different glazes.While the traditional recipe calls only for glutinous rice flour to give that chewy texture I replaced some of it with the addition of silky tofu, the healthiest option that yields exactly the same result.

Ingredients Serving: 8

  1. 250 gm : Silky tofu
  2. 1 cup : Cake flour
  3. 1 cup : Glutinous Rice flour
  4. 1 1/2 tsp : Baking powder
  5. 1/2 cup : Caster sugar
  6. Oil for Deep frying
  7. For the glaze : 1 cup : Powdered sugar
  8. 2 tbsp : honey
  9. 1 tbsp : Soy Milk

Instructions

  1. Prepare the glaze : To a bowl add the powdered sugar, honey and soy milk. Whisk them together until smooth and uniform. Set it aside until needed.
  2. Mash the silky tofu using a potato masher until smooth.
  3. Sift the cake flour, rice flour and baking powder together a couple of times.
  4. To a deep bowl add the sifted cake flour, rice flour , baking powder, mashed tofu and caster sugar.
  5. Knead them to a smooth dough without adding any moisture.
  6. Start heating up oil in a deep pan for frying the donuts.
  7. Cut out eight palm sized squares of parchment paper and set ready.
  8. Pinch out a spoonful of dough at a time and roll it to a smooth ball.
  9. Repeat and shape five more balls.Placing each ball one next to other shape them to a flower.
  10. By flower i mean something like this.
  11. Roll and shape the rest in the same manner and let them sit on the parchment until oil turns hot.
  12. Once the oil is ready for frying add the parchment square along with the dough balls into moderately hot oil.
  13. Fry this on medium high heat until slightly golden.
  14. Using the tongs hold one edge of the parchment and shake it a bit to loosen and then carefully remove the parchment paper from hot oil.
  15. Continue frying until it attains golden color on both the sides.
  16. Once it turns golden carefully remove and drain it on a paper towel lined plate.
  17. Repeat and fry the rest.
  18. Dip the fried donuts in the prepared glaze and sprinkle their tops with the colorful embellishments.
  19. Delicious, chewy yet bread like Pon De Ring donuts are ready to Hogg on.
  20. Make and enjoy every bite of the Pon De ring donuts ,in a healthier way.
