About Carrot Lemon Rice Recipe

Good food leads to good mood.Truly said. And nutritious ingredients mingled with good food leads to worlds best wealth I.e. your perfect health . The south indian delish Lemon rice is a known one pot meal and here we add the taste of carrot to make it more flavourful and aromatic. Addition of its crunch and juice to the pilaf just defines the newness and yumminess.

Carrot Lemon Rice

Ingredients to make Carrot Lemon Rice

  • 1 katori uncooked rice/ 4 katori cooked rice
  • 1 cup grated carrot/ 1 big carrot
  • 2 tbsp oil
  • 1 1/2 tsp mustard seeds
  • 1 finely chopped green chilly
  • 2 tsp dhuli urad dal ( washed black lentils)
  • 10 – 15 curry leaves
  • 1 lemon juice
  • 2 tsp dessicated coconut
  • 1/4 tsp turmeric powder
  • 1 tsp salt

How to make Carrot Lemon Rice

  1. Prepare semicooked rice and keep aside.
  2. In a pan heat ghee/ coconut oil.
  3. Add mustard seeds, chopped green chillies, curry leaves, lentils, coconut and saute.
  4. Add grated carrot and cook for a minute.
  5. Add the rice and salt and turmeric powder.
  6. Toss well and cook for 5 minutes.
  7. Turn off the flame and add lemon juice and mix again.
  8. Garnish with curry leaves and enjoy with curd or curries. Also serve papad and pickle along with it .
