ABOUT Spiced Chai Foxtail millet cake with cream cheese RECIPE

Ingredients Serving: 5

  1. Foxtail millet 1 cup = 180 grams
  2. Tea powder 1 tablespoon
  3. Water 1 medium glass
  4. Green cardamom 3
  5. Cloves 4
  6. Ginger 1 inch piece ( skin peeled )
  7. Dates seedless 1 cup
  8. Cinnamon powder 1 teaspoon
  9. Baking soda 1/2 teaspoon
  10. Baking powder 2 teaspoons
  11. Vanilla extract 1 teaspoon
  12. Milk 1/2 cup
  13. Butter for greasing
  14. Melted butter for brushing the cake top while baking 1 tablespoon
  15. Cream cheese for frosting as required
  16. Chopped pistachios for topping

Instructions

  1. Boil 1 cup water . Add 1 tablespoon tea powder , 3 cardamoms, 4 cloves .
  2. Add 1 inch piece skin peeled ginger . Allow the tea to boil till the raw smell leaves . Switch off.
  3. Soak 1 cup seedless dates in the filtered hot tea for 10 minutes . Preheat cooker using salt for
  4. 15 minutes.For dry ingredients , Take 1cup sieved foxtail millet flour in a wide bowl .
  5. Add 1 teaspoon cinnamon powder to the flour .
  6. Add 1/2 teaspoon baking soda .
  7. Add 2 teaspoons baking powder . Mix all together gently .
  8. Coming to wet ingredients, blend the soaked dates along with the tea ,
  9. 1 teaspoon vanilla extract ,
  10. 1/2 cup milk . Blend all together into a smooth paste .
  11. Transfer the smooth ground paste to a mixing bowl. Add the dry ingredients gradually while mixing
  12. all into a smooth cake batter . Pour this cake batter into a greased cake tin . Place it inside
  13. preheated cooker . Place the cake tin on a wire stand . Cover and bake for 15 minutes . Use a fork
  14. to check . Cool the baked cake completely and then use cream cheese for topping .
  15. Top it up with finely chopped pistachios.
  16. Gluten free fibre rich spiced chai cake is ready .
  17. Perfect tea time cake .
