ABOUT Murtabak RECIPE

Murtabak is a pan fried flat bread stuffed with chicken,mutton or egg.A perfect cup of tea and this murtabak are a rescue to evening hunger pangs.

Ingredients Serving: 6

  1. Chicken - 300gm
  2. All purpose flour - 1 cup
  3. Maida - 1/2 cup
  4. Eggs - 2
  5. Water - 1 cup
  6. Onion - 1/2 cup chopped
  7. Tomato - 1/2 cup chopped
  8. Green chilli - 1
  9. MASALA FILLING:
  10. Chilli powder - 1/2 tablespoon
  11. Turmeric powder - 1/4 tablespoon
  12. Cumin powder - 1/4 tablespoon
  13. Garam masala - 1/4 tablespoon
  14. Oil- 2 tablespoon
  15. Ginger garlic paste - 1 tablespoon
  16. Ghee - 1 tablespoon
  17. Salt - as needed

Instructions

  1. For the dough,mix all purpose flour,maida,salt and one egg.mix them well.
  2. Add 1 cup water to the dough and kneald them softly as shown
  3. Rub your hands with oil and knelad them to form a oval shape.
  4. Divide the dough in to 6 portions and roll them in to balls.Keep them aside.
  5. In a pan,pour oil and add ginger garlic paste.Add tomatoes,onion and green chilli. Saute them well.
  6. Add chicken to the mixing. I have added leftover chicken we had at home.
  7. After a minute add all the masala’s described under ‘filling masala’.
  8. once the filling is cooked,add chopped coriander leaves and switch off the flame.
  9. Once the dough balls have rested,take one at a time and place them in an oily surface.
  10. Press with oiled hands in to a oval shape.Roll this up lengthwise as shown.
  11. Beat one egg and spread them evenly one the dough.
  12. place the filling and make a pocket square as shown.
  13. Meanwhile in a tawa,pour a tablespoon of ghee and slide the sheet in to it.Flip it upside down after a minute and take them from the pan.
  14. Hot murtabak is ready to be served.
