About Lemon Rice Recipe

Hailing from the rice loving South of India this quick and easy to put together recipe requires only a handful of ingredients.

Lemon Rice

Ingredients to make Lemon Rice

  • 1 cup boiled rice (a day old is preferred)
  • 1 tbsp raw peanuts
  • 1 pinch asafoetida
  • 1/2 tsp cumin seeds
  • 1/4 tsp turmeric powder
  • 2 dry red chilies
  • 8-9 curry leaves
  • 1 tbsp coriander leaves (finely chopped)
  • 2 small green chilies (roughly chopped)
  • Juice of 1 lime
  • 2 tsp oil
  • salt to taste

How to make Lemon Rice

  1. Start by heating the oil in a large pan, once hot add in chilies, cumin seeds, peanuts, curry leaves, turmeric powder and asafoetida, wait for the condiments to turn slightly golden in colour.
  2. Add in the pre boiled rice and toss with a light hand, making sure you do not break the rice.
  3. Adjust salt according to taste.
  4. Remove from heat, add in the lemon juice and mix well.
  5. Garnish with freshly chopped coriander leaves.

My Tip:

Avoid reheating Lemon rice as it will leave you with a bitter taste. If you want to pre make and serve later, make the rice before hand, heat and add the lemon juice just before serving.
