ABOUT Palada Payasam RECIPE

This is a very rich payasam made with rice ada,milk and sugar as main ingredients.Onam sadya is not complete without this payasam

Ingredients Serving: 5

  1. Rice Ada (Readymade ) - 1 Cup
  2. Milk - 6 Cups
  3. Sugar -3/4 Cup
  4. Cardamom Powder -1/4 tsp
  5. Ghee - 2 tbsp
  6. Water - 2 cups
  7. Cashews - 2 tbsp (optional)
  8. Raisins -2 tbsp (optional)

Instructions

  1. *Boil the milk well and keep it aside.Wash and drain the rice ada.
  2. *In a vessel boil the 2 cups water, switch off the flame .Soak the ada in hot water,cover it and keep it aside for 30 mins.
  3. *Drain the ada and rinse it 2 or 3 times in cold water to remove excess stickness in the ada and keep it aside .
  4. *Heat a heavy bottom vessel ,add 1 tbsp ghee. Add sugar and saute until it melts with ghee.Now add ada and roast it until the colour changes into light brown colour and also well coated with sugar and ghee.
  5. *Now pour the boiled milk in ada and continue boiling until it thickens and colour changes into pale pink stirring continuously.
  6. *Add the cardamom powder and mix well. *Heat the ghee in a pan and fry the cashew ,raisins.add this to the payasam which is optional only.Generally Keralites dont add cashew and raisin in palada payasam.
  7. *Serve hot or chilled !!
