Crustless Mixed Vegetable Quiche

ABOUT Crustless Mixed Vegetable Quiche RECIPE

Fluffy eggs and mixed vegetables make a lovely bake that needs no crust! Enjoy a slice or two for breakfast or brunch!

Ingredients Serving: 6

  1. 5 eggs
  2. 1/4 cup Milk
  3. 1 small onion, finely chopped
  4. 1 large green chilli, sliced
  5. 3 cloves of garlic, grated
  6. 1/2 cup sliced mushrooms
  7. 1/2 cup broccoli florets
  8. 1/2 cup zucchini, sliced and cut into quarters
  9. 1/2 cup chopped bell pepper/capscium
  10. 1 small tomato, chopped
  11. 1/2 tsp Italian seasoning
  12. Salt to taste
  13. Black pepper powder
  14. 1/2 to 3/4 cup grated cheese (cheddar, mozzarella or a mix of both)
  15. 2 tsp hot chili sauce or Sriracha sauce
  16. Finely chopped coriander leaves/cilantro for garnish

Instructions

  1. Preheat oven to 350 F or 180 C. Lightly grease a 9-inch pan. Beat eggs with milk, salt and pepper powder; keep aside
  2. Heat oil in a saucepan and saute onions, garlic and green chilies for a few minutes until the onions are slightly soft. Stir in broccoli and mushrooms and fry on medium high heat for a minute or two.
  3. Next, add the zucchini and bell pepper and fry again for another minute, stirring often. Stir in chopped tomatoes along with Italian seasoning and a dash of salt.
  4. Remove from heat and drizzle hot sauce; give it a good stir.
  5. Let cool a bit. Spoon mixture into prepared pan and sprinkle cheese on top.
  6. Pour the beaten eggs over the vegetables and cheese; mix gently with spoon to distribute the eggs evenly.
  7. Bake in hot oven for 35 to 45 minutes until cooked and light golden in color. Remove and cool for 10 minutes before serving.
  8. Enjoy sumptuous spicy, fluffy slices of crustless mixed vegetable quiche for breakfast, lunch or as a lovely brunch!
