ABOUT Shakshuka RECIPE

A highly protein dish having the goodness of eggs, tomatoes, capsicum

Ingredients Serving: 2

  1. 2 eggs
  2. 1 medium size onion peeled and diced
  3. 1 Tbsp olive oil
  4. 1 clove garlic minced
  5. 1 green capsicum chopped
  6. 1 cup ripe tomatoes diced
  7. 2 Tbsp tomato paste
  8. 1 tsp red chilli powder
  9. 1 tsp cumin
  10. 1 tsp paprika
  11. 1 pinch cayenne pepper
  12. salt and pepper powder to taste
  13. 1/2 Tbsp fresh coriander leaves chopped

Instructions

  1. Heat the oil in a deep pan. Add the chopped onions and sauté for a few minutes until the onions begin to soften. Add the minced garlic and sauté until fragrant
  2. Add the chopped capsicum and sauté over medium heat until softened
  3. Add the diced tomatoes and tomato paste and stir to blend well
  4. Add the red chilli powder, cumin, paprika, stir well and simmer over medium heat till the mixture starts to reduce. Spice and season it to taste
  5. Break the eggs one at a time, directly over the tomato mixture, spacing them evenly over the sauce. Cook till the eggs are done to ones liking
  6. Garnish with chopped onion rings, chopped coriander leaves and serve hot
