ABOUT Shakshuka RECIPE

A Middle Eastern dish having the protein of eggs and tomatoes and capsicum

Ingredients Serving: 2

  1. 2 Eggs
  2. 1 Tbsp olive oil
  3. 1 green capsicum
  4. 1 clove garlic minced
  5. 1 medium onion peeled and diced
  6. 2 cups ripe tomatoes diced
  7. 2 Tbsp tomato paste
  8. 1 tsp red chilli powder
  9. 1 tsp cumin seeds
  10. 1 tsp paprika
  11. 1 pinch cayenne pepper
  12. Salt and pepper powder as per taste
  13. 1/2 Tbsp fresh coriander leaves chopped fine
  14. Fee onion rings to garnish

Instructions

  1. Heat the oil in a pan. Add the chopped onions and sauté for a few minutes until the onion begins to soften. Add the minced garlic and sauté until fragrant
  2. Add the chopped capsicum and sauté over medium heat until softened
  3. Add the diced tomatoes and tomato paste to the pan and stir to blend well
  4. Add the red chilli powder, cumin, paprika, stir well and simmer over medium heat till the mixture starts to reduce. Spice and season it to taste
  5. Break the eggs one at a time directly over the tomato mixture spacing them evenly over the sauce. Cook till the eggs are done to ones liking
  6. Garnish with chopped coriander and onion rings
