Couscous is cooked fluffy without oil, and Chicken and Eggs are added to make Biriyani and served by adding sauted Broccoli.

Ingredients Serving: 5

  1. Chicken 500 grams. ( Preferably boneless)
  2. Curd 2 tbsp
  3. Salt to taste
  4. Turmeric 3/4 tsp
  5. Ginger garlic paste 1 tbsp
  6. For Couscous
  7. Couscous 2 cups
  8. Water 3 Cups
  9. Salt to taste.
  10. Olive oil 1 tbsp
  11. Eggs 5 ( hard boiled)
  12. For chicken seasoning
  13. Onions 2 ( big) chopped
  14. Ginger grated 1 tbsp
  15. Garlic cloves crushed 5 to 7
  16. Cinnamon pieces 4 (small)
  17. Cloves 5 to 7
  18. Bay leaves teared few
  19. Badi elaichi 1
  20. Oil ( cannolla) 2 tbsp
  21. Salt to taste
  22. Chili powder 1 tsp( to taste)
  23. coriander powder 1 tbsp
  24. Chicken masala 1 tsp
  25. Coriander leaves chopped 2 tbsp
  26. Fresh cream / butter 2 tbsp
  27. Broccoli florets 1 cup.
  28. Butter 1 tsp
  29. Salt and pepper to taste.

Instructions

  1. Wash marinate Chicken with Curd , salt, turmeric and ginger garlic paste.
  2. Keep in fridge for 45 minutes'.
  3. Boil water for couscous. Add required amount of salt.
  4. Take couscous in a big vessel. Add boiling water , cover the pan and keep for 15 minutes.
  5. Pressure cook the chicken . Cool and make pieces to add in biryani.
  6. Add Olive oil to the Couscous and Fluff Couscous with fork.
  7. Heat oil in a big heavy bottom pan. Add chopped Onions. Give a stir.
  8. Add Cloves, Badi elaichi, Cardemom, Bay leaves. Fry with Onions.
  9. Add ginger, Garlic. Saute.
  10. Add chilli powder, Coriander powder, Chicken masala and saute.
  11. Add cooked Chicken with half cup chicken soup.
  12. Cook everything together for 5 minutes.
  13. Now add Couscous. Mix well , cover the pan , dim the heat .And let it cook together for 3 to 4 minutes.
  14. Stir fry broccoli florets in butter. Add salt and pepper.
  15. Peel and chop the eggs to desired size. You can separate egg yolks so that you can only serve whites if someone doesn't want to have eggs.
  16. Now add butter/ fresh cream to the Couscous . Give a stir with fork.
  17. Serve with garnish of Eggs, Broccoli florets and Coriander leaves.
