Ingredients to make Andra style chicken pepper fry

  • 1kg Chicken, curry cut pieces
  • 2 tbsp Pepper corns , crushed
  • 1/2 cup curd
  • 2 spring curry leaves
  • 3-4 whole dried chillies
  • 1 tbsp ginger garlic paste
  • Salt to taste
  • 1/2 tsp turmeric powder
  • 1 tbsp Oil

How to make Andra style chicken pepper fry

  1. Wash and drain the chicken pieces well before marination.
  2. Take a bowl, add curd, salt , ginger-garlic paste, turmeric powder and curry leaves. Mix it well.
  3. Add chicken pieces to the marinade and nicely massage it with the marinade sauce. Leave it for at least 30- 40 minutes in the refrigerator,
  4. After 40 minutes heat oil in a pan, add red chillies and marinated chicken pieces, stir it well, now cover it with a lid and cook on low heat for 10 mins.
  5. After 10 mins open the lid and sprinkle 1/2 of the crushed pepper, check for the moisture,if it is dry sprinkle some water,again cover and cook on low heat till done, It will take about 5- 10 minutes approx.
  6. Finally add the remaining pepper powder and mix it well, its ready to serve,

Always marinate the chicken overnight and refrigerate for juicy texture.
