ABOUT Chocolate Puffs RECIPE

Delicious Chocolate puffs are one of my son's favourite snack. Yummy mouth watering puffs can be munched on any time

Ingredients Serving: 3

  1. For puffs
  2. 1/2 cup flour
  3. 50 ml milk
  4. 50 ml water
  5. 1 TSP sugar
  6. 1/4 tsp salt
  7. 2.5 tbsp unsalted butter
  8. 2 eggs
  9. For chocolate filling
  10. 2 egg yolks
  11. 2.5 tbsp sugar
  12. 2 tbsp corn flour
  13. 1 cup warm milk
  14. 1/2 tbsp unsalted butter
  15. 60g semi sweet or dark chocolate chopped
  16. For Topping
  17. 60g semi sweet or dark chocolate
  18. 1/4 cup whipping cream

Instructions

  1. Whisk egg yolks with sugar until pale. Add corn flour and 1/3 cup warm milk to mixture and whisk well
  2. Add egg yolk mixture to remaining warm milk and heat over medium flame until it thickens. Switch off. Add chopped chocolate and whisk until it mixes well. Allow to cool for 10 minutes
  3. Pour in a bowl, cover with plastic wrap such that plastic touches the chocolate filling. Refrigerate until ready to use
  4. Preheat oven to 180 and line baking tray
  5. Sieve flour and keep it aside. In a pan, add milk, butter, water, sugar and salt. Mix well on medium heat until well combined. Remove from heat, add flour to milk mixture and mix until well combined
  6. Return to heat and cook on low heat until flour mixture leaves sides. Switch off. Allow to cool slightly. Add eggs, 1 at a time and mix well
  7. Fill pastry bag with dough and pipe the dough in circles on baking tray. Bake for 25-30 minutes until puffed and brown
  8. Prick at bottom of puffs to release steam. Cut the top layer of puffs and keep it aside. Take out the chocolate filling and remove plastic wrap.Using piping bag or squeeze bottle, fill the puffs with chocolate filling. Now place the cut top layer on top of the filling
  9. In a saucepan, warm the cream and pour it over the chocolate. Allow to sit for 5 minutes and mix until well dissolved. Now with piping bag or squeeze bottle, top the puffs with chocolate ganache. Serve
