ABOUT Chicken Tikka Biryani RECIPE

Tikka pieces mildly marinated with curd, ginger garlic and all dry spices... And then cooked on tava giving coal dhuan ..This coal dhuan actually enhances the flavour along with the perfect quality of Basmati rice in this dish.

Ingredients Serving: 6

  1. Chicken one kg
  2. Curd 1/4 kg
  3. Ginger garlic and chilly paste 4 tbspn
  4. Tandoori masala and kitchen king masala
  5. Garam masala
  6. Red chilly powder
  7. Haldi
  8. Jeera powder
  9. Shahi jeera
  10. Oil and desi ghee
  11. Onion 5 large
  12. Tomatoes 3 big size
  13. Basmati rice 750gm
  14. Tej patta
  15. Coriander leaves and mint leaves
  16. Milk and few strands of saffron

Instructions

  1. Wash and soak basmati rice in water
  2. Prepare onion barista and keep aside
  3. Marinate chicken with two tbsp ggc paste, half dahi, tandoori msl, red chillies pd, kitchen king msl, salt, turmeric and keep aside for half an hour approx.. More if possible
  4. Then in the same pan u marinated chicken... Keep it on dum and cook chicken without adding water... It will leave it's on water.. Keep checking in between... Keep the flame slow initially...
  5. When chicken is done, keep the flame high.. And dry the water
  6. Then remove all the pieces and take a pan... Stir fry the pcs in equal quantity of butter/ ghee.
  7. Give coal dhuan finally
  8. Now take a pan.... Heat oil. Take remaining dahi in a bowl add tomatoes, allbdry spices accept that of tandoori masala and ggc paste. Pour thisin oil n fry well
  9. Add the masala of marinated chicken which we cooked in pan... Add water in that pan and stir entire masala.. Fry all the masala well.add coriander leaves and mint leaves .keep slow flame...add birista crushed.
  10. Meanwhile Boil water... Add salt and Tej patta..when boiled add soaked rice after draining water. Cook rice almost 80%
  11. Now add chicken tikka pcs in biryani masala mixture. Top it with rice.... Mix milk and saffron strands. Add on the rice
  12. Now heat ghee add shahi jeera and pour this on rice. And sprinkle some birista and coriander leaves chopped and mint leaves.
  13. And set on dum covering the vessel properly. U can also form layers if u want
