Wash and thoroughly dry lemons.Chop the lemons into halves and cut each half into 2 equal pieces.
In a mason jar or any glass jar, place a few lemons o the bottom and add a layer of salt and repeat until you finish all the lemons.
Close the jar tightly and let it sit by a widow for a couple of weeks, about 2-3 weeks.
After 2-3 weeks, the lemons would have become soft.
Roast fenugreek seeds and pound or process it into a fine powder.
Heat oil in a pan, add cumin seeds and mustard seeds. Once it splutters, add garlic and stir fry until it becomes brown.
Add the chillies and saute well over medium heat.
Now add in the lemons along with the juice and stir for a couple of minutes, 2-3 mins.
Mix in the red chilli powder, fenugreek powder, hing and turmeric powder and coat well.
Remove from heat and let it cool.
Transfer this into Jars and store in refrigerator.
