Ava - Kai means raw fruit (kai) with mustard (ava). So the stars of this recipe is raw mango and mustard powder.

Ingredients Serving: 10

  1. Mango Pieces - 4 cups( 4-5 medium raw sour mangoes)
  2. Mustard Seeds - 1 Cup
  3. Red Chilli powder -1 cup
  4. Garlic cloves -1/2 cup (OR) Whole bengal gram -1/2 cup
  5. Methi seeds -1 tbsp
  6. Salt -3/4 cup +2 tbsp
  7. Sesame oil - 1 3/4 cup

Instructions

  1. Wash and wipe the mangoes with dry cloth. Take a sharp knife to cut into 1 inch thick mangoes with inner shell intact .Now take a dry cloth to wipe pieces from all sides ensuring that they are cleaned and dried well.
  2. Keep sterilized and sun dried jars ready before you start pickling. Grind mustard seeds into a fine powder.
  3. Now take a big bowl mix the mustard seed powder+salt+red chilli powder. Add the mango pieces into it and mix well and apply the mixture all over the mangoes with your hands. Add garlic cloves /whole bengal gram and methi seeds to this mix
  4. Add 1 1/2 cup oil to this mixture and mix well. Put the masala coated mango mixture in sterilized bottle. Now add remaining 1/4 oil over it and cover it with lid. Keep it aside for 2 -3 days.
  5. On 1st day check if some oil might have started floating over the pickle, now taste it. Mix with clean and dry ladle. Repeat the process for 3-4 days.
  6. 3rd day if you see the oil is floating on top then it is perfect. Your pickle is ready to serve. Have it with hot rice or ghee.
