Spinach Yogurt Dip

Ingredients to make Spinach Yogurt Dip

  • 6 oz fresh spinach leaves (thick stems removed)
  • 2/3 cup hung yogurt or Greek yogurt
  • 2 garlic cloves
  • 1 tsp Roasted Cumin Powder
  • 1 tbsp olive oil
  • 2 tsp chopped walnuts
  • 1/4 tsp dry mint or pudina powder
  • salt as per taste

How to make Spinach Yogurt Dip

  1. Wash and clean spinach with water to remove any dust or grain.
  2. Add sufficient water in a big container and bring it to a boil. Add spinach leaves into the boiling water and blanch it for around 2 minutes or less.
  3. Remove the leaves by a strainer or skimmer and let it cool in ice bath for 30 seconds. Remove the leaves and squeeze out excess water from it.
  4. Finely chop the blanched spinach and 1 garlic clove.
  5. Heat a pan and add 2 tsp olive oil. Add chopped garlic and spinach. Stir and fry at medium high for 5-6 minutes till it turns crispy. Turn off the gas and let it cool.
  6. Take the hung yogurt or Greek yogurt in a bowl. Finely chop 1 garlic clove and add it into the yogurt.
  7. Add mint, roasted cumin powder and salt as per taste. Add the fried spinach and garlic into the yogurt. Stir and mix lightly.
  8. Transfer it into a serving bowl and garnish it with chopped walnuts. Drizzle a little olive oil over it. Serve it with any flat bread or pita. You can also enjoy it with nachos/tortilla chips or raw vegetables like cucumber.
