Kadala Curry

Ingredients to make Kadala Curry

  • 1 cup kala chana soaked n boiled
  • 1 onion Chopped fine
  • 1/4 cup coconut
  • 1 tbsp coriander Seeds
  • 1/4 tsp turmeric powder
  • 1 tsp red chilli powder
  • 3 dry red chillies
  • 8 to 10 pepper corns
  • 1 tsp cumin seeds
  • 1 tsp fennel seeds
  • 1 tomato diced
  • 1/2 tsp garam masala powder
  • salt to taste
  • 3 tbsp coconut oil
  • An inch piece ginger
  • 2 garlic cloves
  • water as needed
  • cilantro leaves chopped

How to make Kadala Curry

  1. Soak the kala chana for 4 to 6 hrs or until doubled n plumped up ..later boil them in enough water until soft but not mushy..
  2. Ina small pan add coconut pieces n fry until slightly golden..n cool.. In a blender jar add fried coconut , coriander seeds, red chilli pieces, pepper corns , ginger garlic , garam masala, turmeric, red chilli powder, fennel seeds, diced tomato n grind into fine paste adding water as needed..
  3. In a pan add oil once hot add the chopped onion and a dry red chilli broken into pieces ...saute until onions turn golden..
  4. Now add the ground masala paste and quarter cup of water ..stir well n cook on medium heat until oil oozes out n all the paste is cooked without any raw flavors...
  5. Now add the boiled chana along with its water n cook covered until it attains required consistency or say for about 8 to mins... Lastly add salt stir... Sprinkle with cilantro leaves n serve hot ....

My Tip:

Add just enough water while boiling chana ...becoz we can use this in making gravy without discarding all the goodness... Add less salt n later adjust as coconut gravies turn salty real quick...
