Kara Kuzhambu

Ingredients to make Kara Kuzhambu

  • potato - 1 (boiled)
  • Drum stick - 6 pieces
  • Brinjal - 2 sliced
  • onion - 1/4 cup (chopped)
  • tomato - 1 (chopped)
  • red chilli powder - 1 tsp
  • turmeric powder - 1/4 tsp
  • cumin powder - 1/4 tsp
  • coriander powder - 1 tsp
  • tamarind - 1 lemon size ball
  • garlic - 2 pods ( minced)
  • oil - 2 tbsp
  • mustard seeds - 1/2 tsp
  • cumin seeds - 1/2 tsp
  • salt to taste

How to make Kara Kuzhambu

  1. Soak the tamarind in 1/2 cup water for 15 minutes and then mash them, extract the tamarind pulp. Keep aside.
  2. Heat oil in a pan, add mustard seeds, cumin seeds and let them crackle.
  3. Add the minced garlic and onion, saute them well till onions turn translucent.
  4. Add chopped tomatoes and saute them till they turn mushy.
  5. Add Brinjal and Drumstick. Saute them well till they are half cooked.
  6. Add red chilli powder, cumin powder, coriander powder and mix them well.
  7. Add 2 cups or more water and let the vegetables (brinjal and drumstick) cook completely.
  8. After they are cooked add in chopped boiled potatoes and tamarind extract followed by salt. Mix them well.
  9. Let the kuzhambu boil and simmer for a while so that the slight thick consistency is obtained. Oil should float on top of the kuzhambu.
  10. After the kuzhambu is slightly thick, turn off the flame.
  11. Serve them with hot steaming Rice and Papadam.

My Tip:

Little roasted methi seeds in the kuzhambu at the end will increase the flavor and the taste.
