ABOUT Samosa RECIPE

My son is a big Motu - Patlu fan & that is where he has developed liking for Samosas. We dont have good samosa shops in nearby area, so I make it @ home.

Ingredients Serving: 2

  1. 2 to 3 medium sized boiled and peeled potatoes
  2. 3 green chillies
  3. 5 garlic cloves
  4. 1" ginger
  5. Oil
  6. Cumin seeds, mustard seeds, coriander seeds, fennel seeds
  7. Aamchur powder
  8. Garam masala
  9. Turmeric powder
  10. Red chilli powder
  11. Finely chopped coriander
  12. Green peas
  13. 1 bowl maida
  14. 1/5 bowl hot desi ghee / oil for moyan
  15. Salt
  16. 1/4 tsp ajwain
  17. Water
  18. Oil for deep frying Samosas

Instructions

  1. Mix all ingredients of dough(maida, water, oil, salt, ajwain) and knead into a firm dough. Cover it with wet cloth and keep it aside for 20-30 minutes.
  2. Heat oil in a pan. Add cumin, mustard, coriander & fennel seeds. Add crushed garlic-chilli-ginger to this, saute over low flame. Add green peas, potatoes, red chilli powder, turmeric powder. Mix well, add aamchur powder and lil garam masala
  3. Add salt, finely chopped coriander and mix. Aaloo stuffing is ready.
  4. Take a portion of dough, roll into 6"x3" oval disc. Cut this into 2. Take 1 half , make a cone, fill it with aaloo sabzi, close the cone with applying water to its edges.
  5. Prepare all the cones and heat oil in a pan. Deep fry these samosas over low to medium flame.
  6. Serve hot with chutney or tomato sauce. Enjoy!
