A very simple and quick soup for dinner.

Tomato Creme Soup

Ingredients to make Tomato Creme Soup

  • 4 Red plump tomatoes
  • 6 garlic cloves
  • butter as required
  • Small piece of ginger
  • Fresh coriander
  • pepper as per taste
  • 1 small onion chopped finely
  • cream 2 to 3 tablespoons
  • sugar 1 teaspoon(optional)
  • 3 slice bread for croutons
  • olive oil as required
  • chilli flakes as per taste

How to make Tomato Creme Soup

  1. Croutons preparation:
  2. Slice bread into cubes, add chopped garlic, pepper and sprinkle olive oil. Mix well and bake for 2 to 3 minutes in a pre heated oven at 200 degree centigrade. Or toast them in a frying pan (Be aware that it will be less crispier and consume more oil).
  3. For soup the soup:
  4. Boil tomatoes allow to cool and peel it. Blend it well.
  5. Heat a saucepan, add a small block of butter as it melts, add garlic and ginger chopped finely. Saute till the color changes. Add chopped onions and saute till the color turns light pink.
  6. Add pepper, salt to taste and finally pour the blended tomato puree. Mix well and add water if required. Simmer it for 5 minutes. Just before serving add cream, mix well and pour cream and top it with croutons. Serve hot.
