ABOUT Mutton kosha RECIPE

This is a recipe of spicy mutton, cooked in spices and slow cooked. A perfect curry to be served with some hot steamed rice.

Ingredients Serving: 5

  1. Mutton 1 kg. cleaned medium pieces
  2. For marination : Finely chopped garlic 1 teaspoon
  3. Ginger- Cumin paste 2 teaspoon
  4. Green cilli paste -2 teaspoon (depends on your taste)
  5. Nut meg powder- 1/2 teaspoon
  6. Sour curd 4 teaspoon,
  7. Onion paste 1 teaspoon
  8. Termeric powder 1 teaspoon, Kasmeri Red cilli powder 1/2 teaspoon, Cilli powder 1/4 teaspoon
  9. Garam mashala powder 1/2 tea spoon (you can use any ready made powder of your coice for this st
  10. Oil for marination-1 table spoon
  11. For cooking: Bay leaf 1-2 nos
  12. Onion finely sliced 3 medium size, out of which 1 onion deep fried in ghee with 1/2 teaspoon of sugar and make paste of it.
  13. Ginger paste- 1 table spoon
  14. Garlic paste- 2 table spoon, Coriander- Cumin- Green cilli paste -2 teaspoon,
  15. Spice powder-Kasmeri Red cilli powder 1/2 teaspoon, Cilli powder 1/4 teaspoon, Salt as per taste.
  16. Garam Mashala powder- grind roasted 3 cardamom+ 3 cloves+ 1 small stick cinnamom+ jayitri+ nutmeg all together 1 and 1/2 tespoon.
  17. Green cillies- 4-5
  18. Deshi ghee for cooking -3 Table spoon and little more

Instructions

  1. Take the cleaned mutton in a bowl. add all ingredients mentioned for marination and little salt. leave it for marination for at least 1 and 1/2 hour.
  2. Take a heavy kadai with perfect lid. Heat Ghee, add bay leaf little fry, add onions (finely sliced raw onion) and fry till the colour changes to golden brown.
  3. Add all mashala pastes. except the onion fry paste. mix well and cook for few minutes.
  4. Now add marinated mutton , all spice powders , fried onion paste and mix. Cook for 4-5 mins.
  5. Add half of the garam mashala garam mashala powder and little ghee. Cover with lid. and leave it for about 30-35 mins. On low flame. Let it cook, do not add water. The juice released by mutton is enough for cooking.
  6. After 30-35 mins. Remove the lid add whole chilies and sprincle remaining Garam Mashala powder, spread little ghee on it and cover again. cook for about 20 mins.
  7. After 20 mins check. If mutton is cooked properly. Tern off the nob of gas.
  8. Let it stand for about 10 mins. Then open the lid, mix with a spatula. Now it is ready to serve.
  9. Serve with Lachchha paratha or any Paratha or Polao or Gheerice.
