About Avacado, Blueberry and Nuts Cheesecake Recipe

It's a no bake Fresh Avacado, Blueberry and Nuts cheesecake. It's base is made with graham crackers,pecan,almond,sugar and melted butter.Filling is made with cream cheese,avacado, blueberries,sugar,sour cream and vanilla extract.This cheesecake is topped with fresh Cherries, blueberries and blueberry puree.No bake Cheesecake is loaded with fresh fruits,nuts and cream cheese which can be consumed by all.

Ingredients to make Avacado, Blueberry and Nuts Cheesecake

  • For the crust
  • almond 100 grams
  • Pecan 150 grams
  • Graham crackers to 250 grams
  • Soft melted butter 70 grams
  • sugar 50 grams
  • salt to taste
  • For the filling
  • cream cheese for 455 grams
  • sugar 150 grams
  • lemon juice 20 grams
  • vanilla extract 1/2 teaspoon
  • sour cream 75 grams
  • avocado 1
  • fresh blueberries 500 grams
  • For Garnishing
  • blueberry puree and blueberries
  • Whole cherries

How to make Avacado, Blueberry and Nuts Cheesecake

  1. FOR THE CRUST
  2. IN A MIXER,ADD GRAHAM CRACKER
  3. ALMOND FLAKES,PECANS AND SUGAR
  4. PULSE IT TO A FINE POWDER AND TRANSFER IT TO A PLATE
  5. MELT BUTTER AND ADD TO THE CRUST MIXTURE
  6. MIX IT THOROUGHLY.
  7. LINE A PARCHMENT PAPER IN A BAKING TIN AND ADD THE CRUST MIXTURE
  8. LEVEL IT EVENLY
  9. USE PALM OR A LADLE TO PACK IT EVENLY AROUND THE CORNERS
  10. PLACE THE TIN IN A REFRIGERATOR FOR HALF AN HOUR TO SET.
  11. FOR THE FILLING
  12. ADD CREAM CHEESE INTO A CLEAN BOWL
  13. TO IT ADD SUGAR,SALT ,LEMON JUICE
  14. SOUR CREAM AND VANILLA EXTRACT
  15. WHISK IT WITH AN ELECTRIC BEATER
  16. ADD MASHED AVACADO AND WHIP AGAIN
  17. WHIP IT FOR A MINUTE OR TWO TO HAVE AN EVEN SMOOTH MIXTURE .
  18. ADD FEW WHOLE BLUE BERRIES
  19. ADD FRESH PUREED BLUEBERRY MIXTURE AND MIX IT WITH A SPATULA
  20. CHECK THE CRUST IS SET PERFECTLY.ADD THE AVACADO BLUEBERRY CHEESE MIXTURE TO THE CRUST.
  21. SPREAD IT EVENLY AND TAP WELL
  22. AGAIN PLACE IT IN THE REFRIGERATOR FOR TWO TO THREE HOURS UNTIL IT SETS FIRM
  23. FOR TOPPING THE CHEESE CAKE,BLEND SOME BLUEBERRIES WITH LITTLE SUGAR.
  24. FRESH BLUEBERRY SAUCE IS READY.
  25. AFTER THREE HOURS THE AVACADO BLUEBERRY CHEESE CAKE IS FIRM.
  26. DEMOULD FROM BAKING TIN AND CUT INTO DESIRED SLICES.
  27. PERFECT NO BAKE AVACADO BLUBERRY CHEESE CAKE IS READY TO SERVE.
