ABOUT Bahraini kebab RECIPE

Bahraini kebab is very popular during Ramadan and usually served during Iftar.  Crisp on the outside with a soft interior, the Bahraini kebab makes a great little spicy vegetarian appetizer, delicious when served with a cool refreshing (will post recipe) yoghurt and coriander dipping sauce. The batter for the Bahraini kebab is made using chickpea flour, known locally as kebab flour… besan and gram flour are also other names for chickpea flour.

Ingredients Serving: 4

  1. 1 cup kebab flour/gram flour
  2. 1/4cup chopped spring Onion
  3. 1/4cup chopped red onions
  4. 1/4cup chopped tomoto
  5. 1/4tsp Baking powder
  6. 1 pinch garam masala
  7. 1Green chilli chopped
  8. 1 tsp chopped garlic
  9. Water 1/2cup
  10. Salt to taste
  11. Oil for frying

Instructions

  1. Add chickpea flour, baking powder, salt, chilli powder and garam masala into a medium mixing bowl
  2. Pour in the water, whisking all the ingredients together until the batter is smooth
  3. Add in the tomato, onion, spring Onion, chilli and garlic, mix all the ingredients together and leave the batter (covered) to rest in the fridge for about 25 to 30 minutes.
  4. Heat oil in frying pan,once heated
  5. Place tablespoons of batter carefully into the hot oil and fry until deep golden, flipping the kebab over, cooking the other side. 
  6. Transfer onto a plate covered with some paper kitchen towel to absorb any excess oil. Serve warm with cold Coriander curd dip
