1.5 cup : All purpose flour
2 tbsp : Corn starch
1/2 tbsp : Baking powder
3 large : Eggs
3/4 cup : Sugar
1/2 cup : Olive oil
1/4 cup : Lemon juice
1/4 cup : Milk
3 cups : Mixed fryit(i used pear,plum,mixed berries)
2 tbsp : Sugar (for berries)
1 tbsp : Lemon juice(for berries)
For glaze : 1 cup : Powdered sugar
2 tbsp : Lemon juice
For garnish : halved berries
Lemon slices
Basil leaves
Instructions
TO THE BOWL OF A STAND MIXER ADD THREE LARGE EGGS.
FIX THE PADDLE ATTACHMENT AND BEAT THE EGGS FOR A MINUTE.
GRADUALLY KEEP ADDING 3/4 CUP OF SUGAR AND CONTINUE WHISKING ON MEDIUM SPEED.
AFTER A MINUTE OF WHISKING ADD A TSP OF LEMON ZEST FOLLOWED BY VANILLA EXTRACT .
INCREASE THE SPEED AND CONTINUE WHISKING FOR COUPLE MORE MINUTES UNTIL EGGS TURN PALE YELLOW.
AS THE EGGS TURNED PALE TURN OFF THE MIXER.
THIS IS HOW THE EGG MIXTURE SHOULD LOOK. NOW ADD 1/2 CUP OF OLIVE OIL AND 1/4 CUP OF LEMON JUICE
TURN ON MIXER AND WHISK FOR A MINUTE TO INCORPORATE THE OIL AND LEMON JUICE WITH EGG MIXTURE.
ALTERNATE AND GRADUALLY ADD THE SIFTED FLOUR AND 1/4 CUP OF MILK.
ONCE ALL THE FLOUR AND MILK IS ADDED WHISK ON MEDIUM SPEED TO COMBINE EVERYTHING WITHOUT ANY LUMPS.
TURN OFF THE MIXER AND SCAPE DOWN THE SIDES OF THE BOWL. GIVE IT A GOOD STIR.
DETACH THE BOWL FROM STAND MIXER.ADD A CUP OF EACH DICED PEAR AND PLUM.
WITH LIGHT HAND JUST FOLD THE DICED FRUIT INTO THE CAKE BATTER.
ADD 2TBSP SUGAR AND1TBSP OF LEMON JUICE TO A CUP OF MIX BERRIES AND MICROWAVE ON HIGH FOR A MINUTE.
SPREAD OUT HALF OF THE BERRY MIX IN THE GREASED AND DUSTED BUNDT PAN.
SOMETHING LIKE THIS !
NOW POUR THE PREPARED CAKE FRUIT BATTER EVENLY INTO THE BUNDT PAN OVER THE BERRY MIX.
ONCE ALL THE BATTER IS SPREAD LAY OUT THE REMAINING BERRY MIX OVER IT.
BOW OUR PAN IS READY TO HIT THE OVEN.BAKE IT IN A PREHEATED OVEN AT 180℃ FOR ABOUT 45 MINUTES.
INSERT SKEWER IN THE MIDDLE OF THE CAKE,IF IT COMES OUT CLEAN THEN OUR CAKE IS BAKED TO PERFECTION.
TO A BOWL ADD 1CUP POWDERED SUGAR AND 2TBSP LEMIN JUICE. WHISK THEM WELL WITHOUT LUMPS.
POUR THE GLAZE EVENLY OVER THE TOP OF COOLED CAKE AND GARNISH WITH HALVED BERRIES,LEMON AND BASIL.
