3 large : Eggs

3 cups : Mixed fryit(i used pear,plum,mixed berries)
2 tbsp : Sugar (for berries)
1 tbsp : Lemon juice(for berries)
For glaze : 1 cup : Powdered sugar
2 tbsp : Lemon juice
For garnish : halved berries
Lemon slices
Basil leaves
Instructions
BEAT 3 LARGE EGGS FOR 1 MINUTE
GRADUALLY ADD 3/4 CUP SUGAR, CONTINUE
WHISKING ON MEDIUM SPEED
ADD 1 TSP LEMON ZEST
ADD 1 TSP VANILLA ESSENCE
INCREASE THE SPEED, CONTINUE WHISKING FOR
2-3 MINS UNTIL THE EGGS TURN PALE YELLOW
THE EGG MIXTURE SHOULD LOOK LIKE THIS, ADD
1/2 CUP OLIVE OIL, 1/4 CUP LEMON JUICE
WHISK FOR 1 MINUTE
GRADUALLY ADD THE SIFTED FLOUR MIX
ADD 1/4 CUP MILK, CONTINUE WHISKING
ONCE ALL THE FLOUR & MILK IS ADDED, WHISK ON
MEDIUM SPEED TILL SMOOTH
ADD 1 CUP EACH OF DICED PEARS & PLUMS
LIGHTLY FOLD IN THE FRUITS INTO THE READY
BATTER
ADD 2 TBSP SUGAR, 1 TBSP LEMON JUICE TO 1 CUP
OF MIX BERRIES, MICROWAVE ON HIGH FOR 1
MINUTE
SPREAD OUT HALF OF THE BERRY MIX INTO A
GREASED & DUSTED BUNDT PAN
POUR THE CAKE BATTER EVENLY ON TOP
SPREAD OUT THE REMAINING BERRY MIX OVER IT
BAKE IN A PREHEATED OVEN AT 180 DEGREES FOR
45 MINS OR TILL DONE
MIX 1 CUP POWDERED SUGAR, 2 TBSP LEMON
JUICE, WHISK WELL TILL SMOOTH, SPREAD ON TOP
OF THE CAKE
ONCE THE CAKE IS GLAZED, GARNISH WITH SLICED
BERRIES, LEMON WEDGES & FRESH BASIL, SLICE &
