ABOUT Vegetable Stew RECIPE

Vegetable stew is commonly eaten in South India with Appams or Iddiappams. It is a whole meal with a combination of colourful vegetables cooked in coconut milk. The thick, rich, creamy stew can also be eaten with boiled rice. Most of the vegetables used in this stew are always available in the fridge. Easy to cook and I love the aromatic flavour and the creamy taste. I prepared it when my in-laws had come over and they loved it!

Ingredients Serving: 4

  1. 1 big Onion (sliced)
  2. 1 cup french Beans
  3. 2 Potato (Cut in cubes)
  4. 10-15 Shallots
  5. 1 1/2 cup florets of Cauliflower
  6. 1 1/2 cup Thick Coconut milk
  7. 1 1/2 cup thin Coconut milk
  8. 2 Carrot (cut in cubes)
  9. 1 tsp Ginger and Garlic (crushed)
  10. 3 Cloves
  11. 3 Red chilli
  12. 3 stems Curry leaves
  13. 4 Black pepper
  14. 4 tsp Green Peas
  15. Cinnamon 1 inch
  16. Oil for Tadka
  17. Salt as per taste

Instructions

  1. Crush the whole garam masalas. Splutter the garam masala in a pan with some oil. Add in curry leaves, red chilli, ginger, garlic and onion. Cook till the onion become transparent.
  2. Combine all the vegetables and add them to the pan. Add the thin coconut milk and bring it to a boil. Cook till all the vegetables are tender. Do not over cook these vegetables.
  3. Add the thick coconut milk and cook for another 2 more minutes. Serve hot with boiled rice.
