Vegetable Stew

Ingredients to make Vegetable Stew

  • 1 big onion (sliced)
  • 1 cup french Beans
  • 2 potato (Cut in cubes)
  • 10-15 shallots
  • 1 1/2 cup florets of cauliflower
  • 1 1/2 cup Thick coconut milk
  • 1 1/2 cup thin coconut milk
  • 2 carrot (cut in cubes)
  • 1 tsp ginger and Garlic (crushed)
  • 3 cloves
  • 3 red chilli
  • 3 stems curry leaves
  • 4 Black pepper
  • 4 tsp Green peas
  • cinnamon 1 inch
  • oil for Tadka
  • salt as per taste

How to make Vegetable Stew

  1. Crush the whole garam masalas. Splutter the garam masala in a pan with some oil. Add in curry leaves, red chilli, ginger, garlic and onion. Cook till the onion become transparent.
  2. Combine all the vegetables and add them to the pan. Add the thin coconut milk and bring it to a boil. Cook till all the vegetables are tender. Do not over cook these vegetables.
  3. Add the thick coconut milk and cook for another 2 more minutes. Serve hot with boiled rice.
