About Minestrone Soup Recipe

A hearty and healthy much loved Italian soup. A great variety of vegetables and pasta tossed in a soup which is quite a meal.

Minestrone Soup

Ingredients to make Minestrone Soup

  • 400 gms Cannellini Beans(kidney beans or rajma)
  • 200gms Green Beans cut into 1-inch pieces
  • 1 1/2 cups Peeled tomatoes finely chopped
  • 1 cup Elbow Pasta
  • 1/3 cup Parmesan (grated)
  • 1/2 cup Fresh spinach finely sliced
  • 1 carrot chopped
  • 1 onion chopped
  • 1 potato chopped
  • 1 Celery Stalk chopped
  • 1/2 head Savoy or Green cabbage
  • 1 garlic clove minced
  • 2 tbsp olive Oil
  • 1 tsp Fresh Rosemary minced
  • 1/4 tsp Red pepper Flakes
  • Salt and ground pepper

How to make Minestrone Soup

  1. Heat oil in a large pot. Add onion, carrots, celery, red-pepper flakes, rosemary, salt, and pepper. Stir until onion begins to turn golden.
  2. Add tomatoes and cook for 1-2 minutes. Add potato, cabbage, cannellini beans, and 6 cups water and bring to a boil. Stir in spinach.
  3. Now add in green beans and pasta, simmer. Cook for 15-20 minutes till all the vegetables are tender.
  4. Season with salt, pepper garlic and basil.
  5. Top with Parmesan.
