Eggless Vanilla Ice Cream

Ingredients to make Eggless Vanilla Ice Cream

  • 1/2 litre whole milk
  • 1/2 litre heavy cream
  • a pinch of salt
  • 2 tsps vanilla extract
  • 1 vanilla pod
  • 2/3 cup of sugar (more if you'd like)

How to make Eggless Vanilla Ice Cream

  1. 1. Heat the milk, cream, salt and sugar gently making sure the sugar has dissolved completely.
  2. 2. Split the vanilla pod and scrape it into the milk. Let it infuse for half an hour. Adjust for sugar
  3. 3. Fish out the vanilla pods and add the vanilla extract to it. Chill this mixture for atleast 1 hour and then freeze in your ice cream maker, according to the manufacturers instructions.
  4. 4. If you do not have an ice cream machine, freeze the mix for three hours until almost frozen and then blend it in a mixier and refreeze.
  5. 5. Serve once completely frozen

My Tip:

Add any clear alcohol so that the milk solids do not freeze completely and you get a smoother ice cream.

Something like vodka rum gin etc which does not have any colour. But you may only add this if u want, it is not necessary

It's difficult to get heavy cream in Indian markets. Amul cream has only 25% cream content in it. Any suggestions on how to overcome this problem??
