ABOUT Golgappa( Pani Puri) RECIPE

Golgappa,the name itself tempting us...its my daughters most favourite recipe.Twice in a month i prepared it for her.

Ingredients Serving: 8

  1. For Puri :
  2. Fine Rava /Sooji -1 Cup
  3. All Purpose Flour -2 tbsp
  4. Salt -1/2 Tsp
  5. Water -1/4 cup +2 tbsp
  6. Oil - for fry
  7. Onion -1 cup (Finely Chopped
  8. Cooked Channa - 1 cup
  9. Cooked Potatoes -5 (medium size) (Mashed it)
  10. Salt - to taste
  11. Red Chilli Powder -1 tsp
  12. Roasted Cumin powder -1 /2 tsp
  13. Chaat masala -1/2 tsp
  14. Bhoondhi - 2 tbsp(Optional)
  15. For Sweet Chutney :
  16. Tamarind / Imli - 1 / 4 Cup (Seedless)
  17. Pitted Dates -10
  18. Red Chilli Powder - 2 Tsp
  19. Grated Jaggery - 1/2 cup
  20. Roasted cumin powder -1 tsp
  21. Black Salt -1/2 tsp
  22. For Pani :
  23. Mint leaves -1/2 cup
  24. Coriander Leaves -1/2 cup
  25. Green chillies -3
  26. Ginger - 1 tsp (chopped)
  27. Black Salt - 1 tsp
  28. Lemon Juice - Juice From 1 lemon
  29. Hing -1/2 tsp
  30. Pani Masala - 2 tsp (I used storebought & Everest Brand )
  31. Salt -to taste
  32. Ice Cubes -Few

Instructions

  1. For Puri : In a bowl Mix rava,All purpose flour,salt.Add the water to a make a soft dough.Cover with a wet cloth and rest it for 30 mins.
  2. *Then knead the dough ,make a 4 eual lemon size ball.Roll into a circle.Dont roll it too thin nor thick.Then cutting it using a round cookie cutter .Remove extra dough .Make puris from remaining dough.
  3. *Heat oil in a kadai ,deep fry the puris until crispy and golden brown .Remove and place them in a kitchen paper to remove excess oil.Cool it completely and stored it in airtight container upto 2 or 3 weeks.
  4. For Sweet Chutney :Pressure cook the tamarind ,1/4 cup water and dates for 2 whistles.Once the pressure settled down.Grind it well and Extract the thin pulp using a strainer.
  5. *In a vessel add the extact pulp,jaggery,red chilli powder,roasted cumin powder,black salt.Stir it until the jaggery dissolves.Boil it well for 4-5 mins.Let it be cool down.
  6. For Pani : Grind the mint leaves,coriander leaves,ginger,green chillies to fine paste.In a bowl add the 3 cups water,Groun paste,Black salt,Salt,Lemon juice ,hing and Pani Masala.Mix it well.Strained It and add the Ice cubes .Keep it aside
  7. Mix it well.Strained It and add the Ice cubes .Keep it aside.Add bhoondis before serving...
  8. For Masala : In a bowl add the mashed potato,salt,red chilli powder,chaat masala.Mix and keep it aside.
  9. How To Serve :Take a puri,gently make a large hole on top,middle side using a spoon or your index finger,Stuff with Potato masala,Channa,Onion .Drizzle some sweet chutney .Take the pani puri in a medium bowl and dip the puri in water.
  10. Serve and enjoy the delicious Golgappa !!
