Ingredients Serving: 6

  1. 250 grams flour
  2. 50 grams sugar
  3. a pinch of salt
  4. 100 grams butter very cold
  5. 1 tsp vanilla extract
  6. 1 egg
  7. 120 ml or 1 cup low fat cream

Instructions

  1. 1. In a bowl mix the sugar, salt and flour together.
  2. 2. Whisk the egg, cream and vanilla together and keep aside.
  3. 3. Cut the cold butter into cubes and then rub into the flour mix until well mixed. Add the cream mix into the flour mix and stir until it just comes together.
  4. 4. Sprinkle flour over a clean surface and roll our the dough, handling it gently. Then use a cutter to cut out the circles of dough for the scones.
  5. 5. Whisk the egg with a spoon of water. Using a pastry brush, brush the tops of the scones with the egg wash.
  6. 6. Bake for 15-18 minutes or until the tops are brown.
  7. 7. Serve warm with clotted cream and fresh strawberries or strawberry preserves.
