Ingredients Serving: 4

  1. FOR BUNS DOUGH:
  2. 250 grams all purpose flour
  3. 1 teaspoon salt
  4. 4 teaspoon.butter or olive oil
  5. 1.5 tablespoon sugar
  6. 190 ml milk
  7. Butter and milk for brushing
  8. Oil for greasing the baking tray
  9. FOR VEGETABLE STUFFING:
  10. 1 medium chopped potato
  11. 1/2 cup finely chopped onions
  12. 1/2 cup finely chopped beans
  13. 1/2 cup finely chopped carrot
  14. 1/4 cup green peas
  15. 1/4 cup chopped Capsicum
  16. 1 teaspoon ginger garlic paste
  17. 2 to.3 teaspoons pav bhaji.masala powdee
  18. 2 to 3 teaspoons oil.
  19. Salt to taste

Instructions

  1. FOR BUNS DOUGH:
  2. Lightly mix sugar and yeast in lukewarm water. Cover and leave undisturbed for 10 to 15 minutes till frothy.
  3. In.a large mixing bowl, combine all purpose flour, milk powder, salt and oil/butter.
  4. Add the frothy yeast mixture to the bowl containing flour mixture. Knead into a dough. You may add a little more milk or flour as needed
  5. Once a soft dough is formed remove from.dough hook and knead gently with your hands . This enables gluten formation.
  6. Apply some oil on the dough so that it doesn't dry.
  7. Place the dough into.a well greased bowl.
  8. Cover with cling wrap and set aside for at 1 or 2 hours. The dough.will double in volume by then.
  9. FOR VEGETABLE STUFFING:
  10. Boil the chopped potatoes, beans, carrots and peas.Then mash the boiled vegetables.
  11. Heat oil in a pan.
  12. Saute the onions for sometime.
  13. Add ginger garlic paste and saute for.a minute. Then add chopped capsicum and saute for.a few seconds
  14. Now add the pav bhaji.masala powder and salt. Saute for a few seconds.
  15. Then add the boiled and mashed vegetables and mix on low flame.
  16. HOW TO PROCEED:
  17. The dough will have doubled in volume by now. Knock the dough lightly to expel.any air pockets.
  18. Divide the dough into equal portions.
  19. Roll out each ball of dough and place a teaspoon of the vegetable stuffing.
  20. Bring.the edges of the dough and pinch.to.seal. Make a nice neat ball. Do the same for all the.buns.
  21. Line up.a baking tray with parchment paper and grease it.
  22. Place the buns on the tray keeping enough space between them with seam side down.
  23. Cover and let them rest for half an hour.
  24. In the meantime, preheat oven to 220 degrees Celsius.
  25. Brush the top.of each bun with milk and sprinkle some sesame seeds.
  26. Once the buns have rested, place the baking tray in the preheated oven.
  27. Bake for 20.to.25 minutes till done
  28. Cool on.wire mesh. Brush with some butter.
  29. Eat them fresh.
  30. Yields about 10.to.12 buns which is enough for 4 people.
