Ingredients to make Onion Utthappam

  • Parboiled Rice .....2&1/2 katoris..medium sized
  • Raw Rice.....1/2 katori
  • Urad dal......1 katori
  • Channa dal...4tbsp
  • Methi seeds...2tbsp
  • Poha ..1katori ..thick variety
  • Onions..4 Big
  • Green chillies...4 no.
  • Coriander leaves..
  • Salt to taste
  • oil

How to make Onion Utthappam

  1. Mix both the rice together Wash & soak for about 4 hours
  2. Mix urud dal, channa dal ,methi seeds .Wash & soak for 4 hours
  3. 5 minutes before grinding , wash & soak the poha with just sufficient water.
  4. After 4 hours grind both the rice mixture & lentil ( dals ) mixture along with the soaked poha separately to a fine paste ..In both cases using just sufficient water required for grinding
  5. Mix both pastes with hand as this will help in fermentation process .Check consistency, should not be runny at this stage as - after fermentation batter tends to loosen up a bit
  6. Keep for about 8 hours or overnite for fermentation. After fermentation batter will double in quantityRecheck consistency of batter , should be a pouring & spreadable one. Add salt to taste & mix well. Your Utthappam batter is now ready
  7. Now we are ready to prepare our Utthappam
  8. Specifically for this variation ..Onion Utthappam - Thinly slice the peeled & washed onions . Finely chop the washed green chillies & mix with the sliced onions. Wash the coriander leaves, chop fine - mix some quantity with onions
  9. Remaining quantity of cut coriander leaves keep for garnishing
  10. Now to begin actual cooking-
  11. Heat a Dosa tava.Spread a little bit of oil all over & after a min , wipe off the excess. Tava should be sufficiently hot .
  12. Pour ..using a big deep curry serving spoon ( karchi ) sufficient batter onto tava
  13. Quickly spread it in circular motion- centre towards outer ends so as to form a circular shape about 6inches in diameter & slightly thick as well
  14. Just as the batter is setting - spread a generous amount of the sliced onion mixture all over the batter. Gently pat with spoon so that it sets into the batter & does not fall off
  15. Drizzle a little oil all around the edges of Utthapam & a little over the onions as well
  16. Once lower side is done &you see that the edges are loosening up...very gently flip it over
  17. Drizzle a little oil all around the edges & heat for a couple of minutes so that the lower portion gets cooked & the onions too.
  18. Flip it over again .You will note that the onions are bit brown in color which contributes to the flavour & taste of this Onion Utthappam. Transfer hot onto serving platter & serve with Sambar & chutney of your choice
