Ingredients Serving: 7

  1. Whole wheat flour 1 cup equals 170 ml
  2. Instant active yeast 1 teaspoon
  3. Salt 2 pinches
  4. Olive oil 1 tablespoon
  5. Warm water 1/4 cup
  6. For the filling :
  7. Large eggs 2
  8. Onions medium sized 2 finely chopped
  9. Ginger garlic paste 1/4 teaspoon
  10. Salt 1/4 teaspoon
  11. White pepper powder as required
  12. Thyme 1 teaspoon
  13. Ghee 1 tablespoon
  14. Mozzarella cheese shredded 2 tablespoons
  15. Other ingredients:
  16. Ghee 4 tablespoons
  17. Black whole pepper 15

Instructions

  1. In a bowl , mix yeast in lukewarm water . Set aside for 10 minutes till yeast activates .
  2. Add wheat flour , salt and oil and knead to a smooth dough . Use warm water to knead .
  3. Cover and rest the dough for 30 minutes / till the dough doubles in size .
  4. Dough doubles in size and turns soft.
  5. Let’s prepare the egg filling .
  6. Heat 1 tablespoon ghee in a pan .
  7. Sauté chopped onions till translucent.
  8. Add ginger garlic paste and sauté till raw smell leaves.
  9. Add white pepper powder .
  10. Add thyme .
  11. Pour in the eggs .
  12. Add salt .
  13. Mix all together and slow cook egg till done .
  14. Finally add shredded mozzarella cheese.
  15. Switch off .
  16. Allow this mixture to cool .
  17. Preheat cooker for 15 minutes in low heat . Use sand / salt for preheating.
  18. Coming to the dough , divide the dough into medium sized balls .
  19. You get 7 balls ought of this measurement .
  20. Take one ball with greased hands .
  21. Gently press the ball in the centre . Fill with a teaspoon of filling .
  22. Close and make a smooth ball .
  23. Shape the balls to oval shape .
  24. See that both your palms are greased completely with ghee .
  25. Use a scissor to cut in front and give a mouth shape to porcupine .
  26. Fix eyes with black whole pepper .
  27. Turn the porcupine in such a way eyes face your opposite , back faces you .
  28. Using a scissor , cut gently to give needed like structure on the porcupine .
  29. Repeat the same to create remaining porcupines .
  30. Place them on a ghee greased plate .
  31. Brush the porcupines with ghee .
  32. Place them inside the preheated cooker and bake for 20 minutes in medium heat until the needle like thorns turn crusty and light brown .
  33. Once baked , take the plate out and leave for few minutes till the bread turns warm .
  34. Whole wheat Porcupine breads are ready to serve .
