ABOUT Smoky Sultani Gosht RECIPE

Mutton cooked with spices and charcoal flavour

Ingredients Serving: 3

  1. Mutton 500 gm
  2. Salt to taste
  3. Oil 3 tbsp
  4. Green cardamoms 5
  5. Black cardamom 1
  6. clove 5
  7. Mace 1 blade
  8. Bay leaf 1
  9. Cinnamon stick 2 inch
  10. Pinch of saffron diluted in water
  11. Hung curd 100gm
  12. Milk 1 cup
  13. Fresh cream 2 tbsp
  14. Kewra water 2 tbsp
  15. Dry rose petals 1 tbsp
  16. Chopped coriander 1 tbsp
  17. Fried onion paste 1 cup
  18. Dried red chillies 3
  19. Butter 1 tbsp
  20. Chopped garlic 2 tbsp

Instructions

  1. Boil 3cup water in a kadhai.
  2. Add all whole spices and mutton pieces.
  3. Boil for atleast 50 minutes.
  4. Heat up butter and oil in pan.
  5. Add dried red chillies. Saute well.
  6. Now add fried onion paste and cook well.
  7. Add chopped garlic. Cook for 4 minutes.
  8. Now add boiled mutton pieces.Cook well.
  9. Add salt and curd.
  10. Pour milk and cook well.
  11. Pour 1 cup mutton stock and cook until boil.
  12. Pour diluted saffron.
  13. Cover and cook for 15 minutes.
  14. Add fresh cream.
  15. Burn the charcoal and put it inside a hundi. Pour 1 tbsp butter from top and close the lid of hundi.
  16. After removing of charcoal, Pour cooked mutton in the hundi,
  17. Now add chopped coriander,rose petals,kewra water from top and close the lid.
  18. Cover the hundi with a foil and cook in low flame for 20 minutes.
  19. Serve hot with rice or Biryani.
