Ingredients to make Kerala Toddy Shop Special Chicken Fry

  • 500gms boneless chicken cut into medium pieces
  • 2 medium size onions finely sliced
  • 5-6 cloves of garlic crushed
  • 1" pièce ginger crushed
  • 1tspn black pepper powder
  • 1/4 tspn turmeric
  • Juice of one lemon
  • oil
  • salt to taste
  • curry leaves
  • vinegar
  • Little Rice flour

How to make Kerala Toddy Shop Special Chicken Fry

  1. Wash the chicken and add vinegar and lemon for 10 mins.
  2. Next Marinate the chicken with garlic ginger chilli pwd pepper powder turmeric salt and rice flour.
  3. Keep aside for 45 mins
  4. Take enough oil in the pan for deep frying and heat
  5. Add the curry leaves to the oil to flavour and then the chicken. Once the chicken is fried strain & keep aside.
  6. Now reduce the oil and fry the onion slices till golden brown and then add the deep fried chicken pieces and mix everything well.
  7. Cook for another 5 mins and then serve hot with a garnish of some fried curry leaves...

My Tip:

While frying the curry leaves keep aside few for the garnish later
