ABOUT Jackfruit Kofta Methi Coconut Milk Curry RECIPE

Jack Fruit Kofta Methi Coconut Milk Curry is a vegetarian delicacy cooked especially around the summer season when jackfruit is available. Again this Jackfruit recipe is unique one. I experimented to make koftas out of jack fruit and cooked in coconut milk and kasoori methi. This tastes heavenly and a great combination with ghee rice, naan, rotis etc. Give a try before the jack fruit season ends.

Ingredients Serving: 6

  1. Raw Jackfruits, cut into small pieces - 250 gms
  2. Finely chopped onion - 2 nos
  3. Green chilli, chopped - 3 nos
  4. Ginger garlic paste - 1 tsp
  5. Chopped coriander - 1 tbsp
  6. Turmeric powder - ¼ tsp
  7. Coriander powder - ½ tsp
  8. Cumin powder - ½ tsp
  9. Garam masala powder - 1/2 tsp
  10. Gram flour - 2 tbsp
  11. Corn flour - 1 tbsp
  12. Salt - to taste
  13. Cooking oil - to deep fry
  14. For the Gravy:
  15. Onion - 2 medium thinly sliced
  16. Tomato puree - 2 cups
  17. Green chillies, chopped - 3 nos
  18. Cumin seed - 1/2 tsp
  19. Ginger garlic paste - 1 and ½ tbsp
  20. Turmeric powder - ½ tsp
  21. Red chilli powder - ½ tsp
  22. Coriander powder - 1 tsp
  23. Cumin powder - 1 tsp
  24. Garam masala powder - ¼ tsp
  25. Cardamom powder - ¼ tsp
  26. Honey - 1 tbsp
  27. Thick coconut milk - 1 cup
  28. Kasoori methi - 1 tbsp
  29. Oil - 2 tbsp
  30. Ghee - 1 tbsp
  31. (dry roast the kasoori methi and crush it with the hands and keep aside)

Instructions

  1. Method for koftas:
  2. Boil the jackfruit in a pressure cooker with a little salt and turmeric powder, until soft. Drain and allow cooling.
  3. Mash the jackfruits in a mixing bowl, add chopped onion, green chillies, coriander powder, cumin powder, garam masala, chopped coriander, salt and mash together to incorporate. Then mix the gram flour and corn flour and ginger garlic paste.
  4. Shape into small oval or round kofta balls.
  5. Heat enough oil and deep fry the koftas until golden brown and keep aside.
  6. Method for gravy:
  7. Heat oil in a kadhai, add cumin seeds.
  8. Add sliced onion and fry until golden.
  9. Add ginger garlic paste, fry for 1-2 minutes on medium heat. Add turmeric, chilli powder, coriander powder, cumin powder and fry until the oil starts to separate.
  10. Then add tomato puree, little salt and ghee, fry until oil separates. Then add ½ a cup of water and allow the gravy to cook for 5 to 7 minutes.
  11. Add honey, kasoori methi and add the fried koftas, sprinkle garam masala powder and add the coconut milk and remove from flame.
  12. Jack Fruit Kofta Methi Coconut Milk Curry is ready to serve.
  13. Serve with ghee rice, roti, naan etc.
