Instant Sooji Appe

Ingredients to make Instant Sooji Appe

  • Semolina/rawa/sooji 1 cup
  • Curd 1/2 cup
  • Onion 1 chopped
  • Tomatoes 1 chopped
  • Capsicum 1 chopped
  • Eno fruit salt (regular flavour) 1 tsp
  • Salt to taste
  • Green chilly 1
  • Asafoetida a pinch
  • Ginger garlic paste 1 tsp
  • Cumin seeds 1/2 tsp
  • Mustard seeds 1/2 tsp
  • Curry leaves 8-10
  • Coriander leaves (chopped)1 tablespoon
  • Water as required
  • Oil 1 tbsp + to cook appe

How to make Instant Sooji Appe

  1. In a large mixing bowl, add curd and water to semolina. Mix gently and keep aside.
  2. Tadka: In a pan heat 1 tbsp oil add asafoetida, cumin seeds, mustard seeds, curry leaves, ginger garlic paste, saute for a minute and take off the flame. Add this to the semolina mixture.
  3. Now add chopped onion, tomato, capsicum and coriander leaves. Add salt and mix well.
  4. Add fruit salt to the mixture and mix gently.
  5. Heat the Non stick Appapatra on medium flame.
  6. Now add a tablespoon of appe mixture in each mould. Cover the Appapatra with a lid & cook for 2-3 minutes (till it becomes golden brown).
  7. Now with the help of a spoon/knife change the position of appe upside down. Cook for two minutes.
  8. Remove and repeat the procedure for the remaining batter.
  9. Serve hot with Coriander chutney, Tomato ketchup or groundnut chutney.

My Tip:

The batter should not be too watery or too thick it has to be thinner than idli batter and thicker than dosa batter. Always cook the appam on low flame to get a nice crunchy and crispy outer crust.
