ABOUT Fettucinne pasta in Indian Style Pesto sauce RECIPE

Having two kids with a very busy schedule gives birth to many such quick recipes. I've made this recipe as a side dish for many of my parties and people of all age group enjoyed it very much. This will fit into Eid's meal menu, as a perfect side dish. As it looks vibrant and fresh and tastes amazing. It is a very good main dish option when you or your guests watch calaroies. It's apt for kids lunch box too as it gets ready in just 5-10 minutes. I've given an Indian twist by adding Indian corriander in place of basil.

Ingredients Serving: 3

  1. 100 grams fettucinne pasta
  2. Salt to taste
  3. 1 teaspoon lime juice
  4. 1-2 teaspoons oil
  5. 200 grams corriander stemmed and cleaned
  6. 2-3 cloves of garlic
  7. Black pepper powder as per taste
  8. 1/4 cup almonds
  9. 1/4 cup chopped seedless tomatoes
  10. Parmesan or cheddar cheese

Instructions

  1. Toast almonds till you see golden coloured spots on them. You can add any nuts you prefer, like walnuts, hazelnuts etc.
  2. In a mixer grinder add corriander leaves garlic and 1/2 the almonds and grind to paste.
  3. Like this
  4. Then add in the same mixture oil, lime juice and salt and peppre and pulse again.
  5. Cook fettucinne in salted boiling water and cook till they look cooked and is mushy when pinched with fingers.
  6. This is cooked and drained pasta.
  7. Drain the water and put in a pan add the new pesto sauce that we just prepared and toss till all the pasta is coated nicely.
  8. Add some chopped tomatoes, sprinkle some cheese and remaining toasted almonds and serve.
