ABOUT Irani Pola RECIPE

Irani Pola is a special Iftar dish prepared during Ramadan in the Malabar region of Kerala. This popular dish may be considered as a spicy cake, with a flavorful and juicy layer of mutton/chicken masala in between a soft and fluffy cake. It is a one pot dish and can be prepared without much hassle.

Ingredients Serving: 8

  1. All purpose flour 1 cup
  2. Milk 1 cup
  3. Eggs 4
  4. Odorless Oil 3/4 cup + 2 tbsp
  5. Mutton 300 g
  6. Onion (chopped) 2
  7. Green chilies (chopped) 2
  8. Ginger garlic paste 1 tsp
  9. Turmeric powder 1/4 tsp
  10. Garam masala powder 1 tsp
  11. Salt as required
  12. Black pepper powder as required
  13. Green capsicum 4-5 slices
  14. Tomato 4-5 slices
  15. Chopped coriander leaves – 4 tbsp

Instructions

  1. Pressure cook mutton with little salt and black pepper powder for 15-20 minutes.
  2. Once done, remove the bones and cut the meat into small pieces and keep them aside.
  3. To prepare the masala filling, heat about 2 tbsp oil in pan.
  4. Saute the chopped onions until they turn soft and pink.
  5. Then add the chopped green chilies and saute until the raw smell goes off.
  6. Now add the ginger garlic paste and saute until the raw smell goes off.
  7. Add turmeric powder and mix well.
  8. Now add the mutton pieces and mix well.
  9. Then add about 2 tbsp chopped coriander leaves and garam masala powder and mix.
  10. Cook covered for 2 minutes.
  11. Switch the flame off and allow to cool down completely.
  12. To prepare the cake batter, blend together the all purpose flour, eggs, milk, oil and little salt very well in a blender/mixer jar.
  13. Now grease the pan in which you are going to cook the cake.
  14. Switch the flame on.
  15. Pour half of the batter on the greased pan.
  16. Close the pan and wait for 2-3 minutes.
  17. Then add the prepared mutton filling. Spread evenly.
  18. Then cover with the remaining batter.
  19. Place the sliced capsicum, tomatoes and the remaining chopped coriander leaves on top.
  20. Cook covered for 20-25 minutes.
  21. Then flip to another pan and cook the other side of the Irani pola for another 2-3 minutes.
  22. You may even bake this cake at 180 degree centigrade in a pre heated oven for 30-40 minutes.
  23. Allow to cool a bit.
  24. Slice and enjoy!!
