Ingredients Serving: 8

  1. for pakora :
  2. Ginger Garlic Paste - 1 Tbsp
  3. Besan / Chickpea Flour - 2 Cups
  4. Red Chilli Powder - 1Tsp
  5. Coriander Seeds - 2 Tsp
  6. Salt - 1.5 Tsp
  7. Hing / Asafoetida - ¼ Tsp
  8. Ajwain / Carom Seeds - ½ Tsp
  9. Roasted Cumin Powder - 1 Tsp
  10. Water - ½ Cup
  11. Oil to fry
  12. For Besan Mix :
  13. Besan / Chickpea Flour - 2 Cups
  14. Red Chilli Powder - 2Tsp
  15. Turmeric - 3 Tsp
  16. Yogurt - 4 Cups
  17. Water - 8 Cups
  18. To Cook Kadhi:
  19. Ghee - 1.5 Tbsp
  20. Methi / Fenugreek Seeds - ½ Tsp
  21. Cumin Seeds - 3 Tsp
  22. Mustard Seeds - 3 Tsp
  23. Dry Red Chilli - 2
  24. Hing - ½ Tsp
  25. Water - 4 Cups
  26. Salt - 3 Tsp
  27. For Tempring / Tadka :
  28. Ghee - 1.5 Tbsp
  29. Cumin Seeds - 1 Tsp
  30. Red Chilli Powder - 1 Tsp

Instructions

  1. Pakora Add all the ingredients for pakora(Except oil) in a bowl and mix well. Heat oil for frying to 400 F.
  2. Take a scoop of pakora mix and add to oil. One scoop at a time. Cook till Pakora's are light golden. take them out and let them cool for few minutes.
  3. Fry them again for crispy pakora's till golden in color. Besan Mix In a bowl add all the ingredients for Kadhi Mix and mix them well.
  4. To Cook Kadhi In a pan on medium to high heat , add ghee , Methi seeds, Cumin Seeds, Mustard Seeds, Dry Red chillies and Hing.
  5. Let the mustard and cumin sputter. Keep stirring so the the Dry Red Chillies dont burn. Now add the Besan mix to the pan. Add water, Salt and mix well.
  6. Let the mix cook till it thickens in consistency. Stri in between. Taste the Kadhi , you should not taste the rawness of yogurt.
  7. Now add the Pakoras to the Kadhi and cook for 5 more minutes. Tadka / Tempring Take a frying pan on medium heat. Add Ghee , Cumin seeds and wait till they sputter. Now add red chilli powder. Immediately add this mix on the Kadhi.
